Today we made cookies using the Oatmeal Cookie recipe on the side of the Craisins package. We followed the recipe, but substituted lard for the butter. The result? Amazing! Crispy edges, semi-soft centers, delicious flavor. Score another win for cooking with lard.
Recipe - Oatmeal Craisin Cookies (with Lard)
2/3 Cup lard (softened)
2/3 Cup brown sugar (packed)
2 large eggs (room temperature)
1 1/2 Cup old-fashioned rolled oats
1 tsp baking soda
1/2 tsp salt
1 1/4 Cup Craisins - Dried Cranberries
2/3 Cup White or semi-sweet chocolate chunks or chips
Preheat ovent to 375 degrees F
Beat butter and sugar together until light and fluffy.
Add eggs, to butter/sugar mixture and mix well.
In a separate bowl, combine oats, flour, baking soda, and salt, slowly adding this to the butter mixture until blended.
Stir in Craisins and chocolate chunks.
Drop by rounded teaspoonfulls onto ungreased cookie sheet.
Bake 10-12 minutes or until golden brown.
Cool on wire rack.
